Spinach and Egg, Sweet Potato Toast

Serves 1

1 large slice sweet potato ( ¼ inch thick)
150g cooked spinach
1 large egg, fried or poached
½ tsp sliced fresh chives
1 tbsp Mr Hugh's Garlic infused rapeseed oil


Toast the slices of sweet potato in a toaster until just cooked through and starting to brown (12 to 15 minutes).
Sweat the spinach in a sauce pan on low heat with the Mr Hugh's Garlic infused rapseed oil. 
Fry or poach your egg. 

Sprinkle with the chives and a little drizzle of Mr Hugh's to serve.
