Warm Bacon, Mustard & Potato Salad

Serves 4

500g baby new potatoes

5 slices smoked back bacon

1 bunch spring onions, chopped

50g cheese, crumbled e.g. Cheshire

2 tbsp Mr Hugh's rapeseed oil

2 tbsp white wine vinegar

1 tbsp Whole Grain mustard

  1. Cook the potatoes in boiling water for 15-20 minutes until tender, then drain and cool slightly.
  2. Meanwhile, grill the bacon for 4-5 minutes until crispy then dice, add the onions, cheese and potatoes.
  3. Mix together the Mr Hugh's, vinegar and mustard and toss into the potatoes.
  4. Season to taste.
