Hazelnut Chicken Salad

Serves 4 People

500g Chicken – cut into strips

1 Lettuce

½ Cucumber

Handful of Rocket

10 ml Mr Hugh’s Hazelnut Oil for drizzling (Buy Now)


For the marinade:


100ml Mr Hugh’s Hazelnut Infused Oil (Buy Now)

1 tbsp Dijon Mustard

1tbsp Lemon Juice

1 Clove of Garlic – Finely Chopped

  1. Combine all of the marinade ingredients in a large bowl. Add the chicken and leave to marinate in a fridge for 15-20 minutes, or overnight
  2. Fry the chicken on a medium heat until cooked through and golden brown on the outside
  3. Prepare the salad by chopping the lettuce and adding sliced cucumber. Finish with a handful of rocket
  4. Top the prepared salad with the cooked chicken and drizzle with the remaining hazelnut oil
