Lemon Pepper Chicken Skewers

Serves 4

2 lbs. boneless skinless chicken breasts or thighs
60ml Mr Hugh’s lemon infused rapeseed oil
3 tbsp freshly squeezed lime juice
4 tbsp cracked black pepper
1-2 garlic cloves – minced
1 tsp paprika
1 tsp salt
1/2 tsp cumin
1/4 tsp turmeric
1/4 tsp cayenne pepper


Add all of the spices, lime juice and seasoning to the Mr Hugh’s Lemon infused rapeseed oil. Add the chicken to the mixture and cover, leaving it in the fridge for 1-2 hours (preferably overnight) to marinate.
Soak the wooden skewers in water whilst the meat marinates.
Skewer the chicken, evenly dividing the chicken.

Grill or BBQ for 10-15 minutes, turning once during cooking to ensure evenly cooked.

Best served with curried rice and salad!
