Mr Hugh’s “Posh” Fish and Chips

Serves 2 People
  • 300ml/10fl oz Mr Hugh’s Extra Virgin Cold Pressed Rapeseed Oil (Buy Now)
  • 2 potatoes, peeled and chopped into chips (soaked in water for ten minutes)
  • 2 tsp butter
  • 2 salmon fillets
  1. For the chips, heat your Mr Hugh’s oil in a deep heavy-bottomed saucepan, until VERY hot. Be extremely careful, and do not leave unattended.
  2. Place the chopped potatoes into a bowl of water to soak for ten minutes. Drain your chopped potatoes and dry well, then lower into the hot oil and fry until crisp and golden. Again, be extremely careful as hot oil can spit. Carefully remove the chips with a slotted spoon and drain on kitchen paper. Place to one side.
  3. For the fish, melt the butter in a griddle pan or frying pan over a medium heat. Add the salmon fillet and fry for 2-3 minutes on each side, or until cooked through, before removing and placing on a warm plate.
  4. Serve your chips alongside the salmon, garnish with parsley if you wish and enjoy!
