Salmon with Creamy Basil and Lime Sauce

Serves 4 People
  • 4 skinned salmon fillets (about 120g each)
  • 4 tbs Mr Hugh’s Basil Infused Rapeseed Oil (Buy Now)
  • 4 tbs of crème fresh or sour cream
  • 1 garlic clove or 1 tbs of Mr Hugh’s Garlic Infused Rapeseed Oil (Buy Now)
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons fresh lime juice
  • Pinch of salt and black pepper
  • Pinch of freshly ground black pepper

Serve with: Roast Vegetables and asparagus

  1. Lightly drizzle salmon with Mr Hugh’s Basil Infused Rapeseed Oil, sprinkle with salt and pepper and gently rub in. Now leave for approximately 10 minutes to let the salmon absorb the flavours.
  2. Meanwhile, blend 1/2 cup Mr Hugh’s Basil Infused Rapeseed Oil with remaining ingredients in a food processor. Pulse until finely chopped, and set aside.
  3. Heat a large non-stick frying pan over a medium to high heat. Now return to the salmon fillets and sauté each one on both sides for approximately 4-5 minutes/until they’re cooked through.
  4. Place salmon, roast vegetables and asparagus onto serving plates. In the warm frying pan, briefly heat the basil sauce from earlier and pour over salmon.
