Summer Omelette

Serves 2 People

3 ml Mr Hugh’s Basil Infused Oil (Buy Now)

5 Medium sized eggs

150ml Milk

1 onion diced

½ green pepper diced

½ orange pepper diced

8 mushrooms diced

Handful of cheese (Mozzarella works best)

  1. In a non-stick frying pan fry off the onion and peppers in the Mr Hugh’s basil oil for 5 minutes then remove from heat and place in bowl
  2. Add the mushrooms, eggs and milk to the bowl then whisk to break up the eggs and mix all of the ingredients together
  3. Heat the frying pan up and add a bit more basil oil, add half of the omelette mixture and cook for 5 minutes on a medium heat, flip the omelette over and return to the heat for a further 5 minutes
  4. Remove omelette from pan and place on an oven proof plate, sprinkle with cheese and place under a medium heat grill
  5. Follow the steps again to cook a second omelette using the remaining mixture
  6. Serve with salad
