Brussel sprout skewers

Serves 10

400g brussel sprouts, washed
1 tsp Mr Hugh’s chilli infused rapeseed oil
12 slices bacon
1 tbsp grated parmesan
1 tbsp crushed garlic
1 tsp mustard
1 tsp smoked paprika
1 tsp salt
Pinch black pepper


Put the sprouts in a large saucepan, cover with boiling water and cook for 6-7 minutes on a high simmer until they are just starting to soften.
Drain the sprouts and place them in a bowl. Add in Mr Hugh’s chilli infused rapeseed oil, garlic, mustard, paprika and salt and toss to combine. Allow the sprouts to cool until you can handle them.

Meanwhile, cut the bacon into streaks and fry until crispy. When the bacon is cooked, remove it from the pan and rest on some kitchen roll.

Take some wooden cocktail skewers and skewer on a sprout. Add the very edge of one of the slices of bacon, add another sprout and skewer the bacon again. Repeat with third and fourth sprout.

Grill the skewers for a couple of minutes to ensure warm before serving. Finish with a sprinkle of the grated parmesan.
