Mina Khan's Coriander Pesto

Serves 2

4 sun dried tomatoes in oil

1tbs tomato purée

1 small clove garlic

1tsp pine nuts

Handful of coriander leaves

1tbs Cold Pressed Rapeseed Oil (I always choose Mr.Hugh's) (Buy Now)

Season with pinch of salt to taste


1. Put all ingredients in a blender and pulse until blended adding a little more oil if needed.
2. Take out amount needed and mix with a little water to serve.
3. Store remaining pesto in a jar/container and refrigerate.
